Stir-Fry Chicken & Teriyaki Mushrooms


Ingredients:
  • 1 cup DIVINA Mushrooms Marinated with Teriyaki, drained (reserve 3 tbsp marinade)
  • 1/4 cup Extra virgin olive oil
  • 2 cloves Garlic, chopped
  • 2 cups Rotisserie chicken, shredded
  • 1 cup Snow peas
  • 1 1/2 cups Pineapple chunks
  • 2 cups Steamed white rice, pre-made
  • 3/4 cup Cashews, roasted, unsalted
  • 1/4 cup Green onions, thinly sliced
  • 1/4 cup Cilantro leaves
  • 2 Red fresno chiles, thinly sliced
Directions:
  1. Add 1/3rd each of oil, ginger, and garlic to large sauté pan and heat over medium high
  2. When oil begins to sizzle, add chicken, mushrooms, and 1 tbsp of reserved marinade and sauté until heated through; set aside
  3. Repeat process with snow peas and pineapples
  4. Serve with rice and cashews, green onion, cilantro, and chiles for garnish
